Microgreens - the unassuming little leafy vegetables. What exactly are they? More matured than sprouting seeds yet younger than baby greens, they are anything but ordinary. And while it skips in size, it certainly does not skip its health benefits: these little guys' nutritional values are off the charts!
Typically, microgreens are harvested after the seed leaves (called Cotyledon) have grown, and sometimes with the first set of its true leaves, in about 7 to 21 days. Each variety offers a unique flavour, colour, shape and texture, yet they are all filled with a substantial amount of vitamins and antioxidants. In a 2012 research study from the University of Maryland's Department of Nutrition and Food Science, they found the various kinds of microgreens contained 4 to 40 times more nutrients than its matured state. High concentrations of Vitamin C, E, K & carotenoids were present in varieties such as amaranth, cilantro, daikon radish and red cabbage. What was first exclusively used as beautiful garnishes by chefs twenty to thirty years ago is now also recognized as a healthy, tasty and sustainable food source for the masses today.

Our microgreens are grown organically, meaning using only organic seeds, with soil, water and LED light source; nothing else (except for popcorn shoots, which are grown completely in the dark to keep their bright yellow colour and crisp texture!). They are grown all through the year, in an indoor nursery in our home in Ottawa with humidity and temperature control. Once they are ready, the microgreens are harvested within hours from delivery, making sure they are as fresh as possible for our customers.
