A study by the University of Maryland in 2012 tested microgreens for several vitamins and found they contained 4 to 40 times more nutrients than their mature vegetable counterparts on a per weight basis. Plus, unlike mature vegetables, they require little to no processing during meal prep. No more removing stems or chopping!
